- 1 lb large shrimp, peeled and deveined
- 1 cup long-grain white rice (or brown rice)
- 4 cloves garlic, minced
- 3 tbsp unsalted butter (or olive oil)
- 2 cups chicken or vegetable broth
- 2 tbsp fresh parsley or cilantro, chopped
- Juice of 1 lemon
- Salt and pepper to taste
- Optional: cheese for topping
Instructions
- Thaw and clean the shrimp. Preheat the oven to 350°F (175°C).
- In a saucepan, combine the rice and broth, bring to a boil, then cover and simmer until the liquid is absorbed.
- In a large skillet, melt butter over medium heat and sauté minced garlic until fragrant, about 1-2 minutes.
- Add shrimp to the skillet and cook until pink, about 4-5 minutes, stirring occasionally.
- Incorporate the cooked rice, lemon juice, herbs, and seasonings into the skillet.
- Transfer the mixture to a baking dish. Optionally, top with cheese. Bake for 15-20 minutes until hot and bubbly.
- Serve warm, garnished with fresh parsley or cilantro.

Avoid overcooking the shrimp to maintain tenderness. Use fresh ingredients for the best flavor.
