  • 1 cup milk (or buttermilk)
  • 2 eggs
  • 1/4 cup melted butter
  • 1/2 cup colorful sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it well.
  2. In a large mixing bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together milk, eggs, and melted butter. Ensure the butter is not too hot.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined.
  5. Stir in the sprinkles gently to maintain their colors.
  6. Portion the batter into the muffin tin, filling each about two-thirds full.
  7. Bake for 18-20 minutes, or until the tops are golden and a toothpick comes out clean.
  8. Let the muffins sit for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra color, sprinkle more sprinkles on top before baking. Store leftovers in an airtight container for up to 3 days.
