- 1/4 cup melted butter
- 1/2 cup colorful sprinkles
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it well.
- In a large mixing bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together milk, eggs, and melted butter. Ensure the butter is not too hot.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined.
- Stir in the sprinkles gently to maintain their colors.
- Portion the batter into the muffin tin, filling each about two-thirds full.
- Bake for 18-20 minutes, or until the tops are golden and a toothpick comes out clean.
- Let the muffins sit for 5 minutes before transferring to a wire rack to cool completely.
Notes
For extra color, sprinkle more sprinkles on top before baking. Store leftovers in an airtight container for up to 3 days.
