Description

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/3 cup granulated sugar
  • 1/2 tsp salt
  • 1 cup milk or buttermilk
  • 2 large eggs
  • 1/2 cup melted butter
  • 1/2 cup rainbow sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it generously.
  2. In a large mixing bowl, combine the cornmeal, all-purpose flour, baking powder, sugar, and salt. Whisk them well to ensure everything is evenly distributed.
  3. In another bowl, whisk together the milk (or buttermilk), eggs, and melted butter until well blended.
  4. Pour the wet ingredients into the dry ingredients, stirring until just combined. Don’t overmix!
  5. Gently fold in the sprinkles, saving a few to place on top of the muffins if desired.
  6. Using a cookie scoop, evenly distribute the batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Bake for 15 to 20 minutes or until the tops are golden and a toothpick inserted into the center comes out clean.
  8. Allow them to cool in the pan for a few minutes before transferring them to a wire rack.
