Delightful blend of sweet and savory Funfetti Cornbread Muffins that take classic Southern cornbread to a whole new level.

- 1 cup cornmeal
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/3 cup granulated sugar
- 1/2 tsp salt
- 1 cup milk or buttermilk
- 2 large eggs
- 1/2 cup melted butter
- 1/2 cup rainbow sprinkles
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it generously.
- In a large mixing bowl, combine the cornmeal, all-purpose flour, baking powder, sugar, and salt. Whisk them well to ensure everything is evenly distributed.
- In another bowl, whisk together the milk (or buttermilk), eggs, and melted butter until well blended.
- Pour the wet ingredients into the dry ingredients, stirring until just combined. Don’t overmix!
- Gently fold in the sprinkles, saving a few to place on top of the muffins if desired.
- Using a cookie scoop, evenly distribute the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 15 to 20 minutes or until the tops are golden and a toothpick inserted into the center comes out clean.
- Allow them to cool in the pan for a few minutes before transferring them to a wire rack.
Notes
Avoid overmixing to prevent dense muffins. Use room temperature ingredients for best results.
