Description

Ingredients

  • 4 ripe peaches, peeled and diced
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Wash and peel the peaches, then cut them into small cubes.
  3. In a medium bowl, combine the flour, baking powder, and salt. Whisk together.
  4. In a larger bowl, cream the butter and sugar until light and fluffy.
  5. Beat in the eggs one by one, and stir in the vanilla extract.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the diced peaches.
  7. Pour the batter into the prepared pan and smooth the top. Decorate with reserved peach slices if desired.
  8. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.
