- 4 ripe peaches, peeled and diced
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1 tsp vanilla extract
- 1 tbsp baking powder
- 1/2 tsp salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- Wash and peel the peaches, then cut them into small cubes.
- In a medium bowl, combine the flour, baking powder, and salt. Whisk together.
- In a larger bowl, cream the butter and sugar until light and fluffy.
- Beat in the eggs one by one, and stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with the diced peaches.
- Pour the batter into the prepared pan and smooth the top. Decorate with reserved peach slices if desired.
- Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.
