French Pear & Almond Pithivier

Description

A delightful homemade pastry filled with sweet pears and creamy almond paste, perfect for family gatherings or special occasions.


Ingredients

  • 1 sheet Puff Pastry
  • 34 ripe Pears (Bosc or Anjou)
  • 200g Almond Paste
  • 50g Sugar
  • 2 tablespoons Butter (for brushing)
  • 1 Egg (for egg wash)
  • Spices & Extracts (vanilla, cinnamon, or nutmeg to taste)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and slice pears into thin, even slices. In a mixing bowl, blend almond paste and sugar until smooth, adding butter if needed. Gently fold in sliced pears.
  3. Roll out one sheet of puff pastry to about 1/8 inch thick and place it on a lined baking sheet.
  4. Spoon almond and pear mixture onto the center of the rolled pastry, leaving a two-inch border.
  5. Roll out the second sheet of puff pastry and lay it over the filling, tucking the edges around to seal.
  6. Whisk an egg and brush the top for a golden finish.
  7. Cut a few slits on top for ventilation and to showcase the filling.
  8. Bake for 25-30 minutes or until golden brown and puffed.
  9. Let cool for about 10 minutes before slicing.

Notes

Use high-quality puff pastry and keep it cold while working to ensure it puffs up well. Avoid overloading the filling to maintain a good seal.
