- 2 lbs beef chuck roast, cut into bite-sized pieces
- 2 large yellow onions, sliced
- 2 large sweet onions, sliced
- 4 cups beef broth
- 4 cloves garlic, minced
- 2 teaspoons fresh thyme
- 2 bay leaves
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup red wine (optional)
- 8 oz Gruyère or Swiss cheese, grated
- 1 baguette or sourdough bread, sliced
- Salt and pepper to taste
- Oil for searing
Instructions
- Heat oil in a large Dutch oven over medium-high heat. Season the beef with salt and pepper, and sear until browned on all sides. Remove beef and set aside.
- Add sliced onions to the pot, cooking until caramelized and deep golden brown, about 20-30 minutes.
- Add minced garlic, thyme, diced carrots, and celery. Cook for a few minutes until fragrant.
- Deglaze the pan with red wine or additional beef broth, scraping up brown bits from the bottom.
- Return the beef to the pot, add the beef broth and bay leaves, and bring to a gentle simmer. Cover and cook on low heat for 1.5 to 2 hours until the beef is tender.
- Preheat the oven to broil. Slice bread and arrange on a baking sheet. Top with grated cheese.
- Once stew is ready, discard bay leaves, adjust seasoning, and ladle stew into oven-safe bowls. Top with cheesy bread.
- Broil for a few minutes until cheese is bubbling and golden. Serve warm.
