French Green Beans with Almonds

Description

A delightful side dish featuring tender green beans sautéed with garlic and topped with toasted almonds.


Ingredients

  • 1 pound French green beans
  • 1/2 cup sliced almonds
  • 2 tablespoons butter (or olive oil)
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Trim the ends of the French green beans and wash them thoroughly.
  2. Blanch the beans in a pot of boiling salted water for 3-4 minutes until bright green and tender-crisp, then drain and plunge into an ice bath.
  3. In a skillet over medium heat, toast the sliced almonds until golden and fragrant, about 3-5 minutes. Remove and set aside.
  4. Melt butter (or olive oil) in the same skillet. Add minced garlic and sauté for about 30 seconds.
  5. Add the blanched green beans to the skillet, tossing until well coated with garlic butter. Season with salt and pepper. Squeeze lemon juice to taste.
  6. Remove from heat and gently fold in the toasted almonds. Serve warm, garnished with fresh herbs if desired.

Notes

For a lighter option, substitute butter with olive oil or vegan margarine. Feel free to use regular green beans if French green beans are not available.
