Description
A delightful side dish featuring tender green beans sautéed with garlic and topped with toasted almonds.
Ingredients

- 1 pound French green beans
- 1/2 cup sliced almonds
- 2 tablespoons butter (or olive oil)
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Trim the ends of the French green beans and wash them thoroughly.
- Blanch the beans in a pot of boiling salted water for 3-4 minutes until bright green and tender-crisp, then drain and plunge into an ice bath.
- In a skillet over medium heat, toast the sliced almonds until golden and fragrant, about 3-5 minutes. Remove and set aside.
- Melt butter (or olive oil) in the same skillet. Add minced garlic and sauté for about 30 seconds.
- Add the blanched green beans to the skillet, tossing until well coated with garlic butter. Season with salt and pepper. Squeeze lemon juice to taste.
- Remove from heat and gently fold in the toasted almonds. Serve warm, garnished with fresh herbs if desired.
Notes
For a lighter option, substitute butter with olive oil or vegan margarine. Feel free to use regular green beans if French green beans are not available.
