Ingredients

- 1 beef roast (chuck or brisket)
- 2 cups beef broth
- 1 onion (sweet or yellow)
- 4 cloves garlic (fresh)
- 1 tablespoon fresh thyme
- 1 tablespoon fresh rosemary
- 8 oz provolone or mozzarella cheese
- 1 package refrigerated biscuit dough
- 2 tablespoons butter (melted)
Instructions
- Brown the beef in a large skillet over medium-high heat, then let it rest.
- Sauté chopped onions and minced garlic in the same skillet until fragrant.
- Deglaze the pan with a bit of beef broth.
- Return beef to the pan, add remaining broth and herbs, cover, and simmer for about 2 hours.
- Shred the beef and mix it back with the juices.
- Preheat the oven and roll out the biscuit dough.
- Spread shredded beef mixture across the dough, top with cheese, fold, and seal edges.
- Brush with melted butter and bake until golden brown (15-20 minutes).
- Serve with au jus for dipping.
Notes
For a lighter version, use low-sodium broth and reduced-fat cheese. Store leftovers in an airtight container for 3-4 days.
