Instructions
- Separate the eggs into yolks and whites.
- In the yolk bowl, combine yolks with milk, melted butter, sugar, and vanilla. Whisk until smooth.
- In another bowl, whisk the flour and baking powder. Gradually add this to the yolk mixture, stirring until just combined.
- Beat the egg whites until stiff peaks form.
- Carefully fold the egg whites into the batter.
- Preheat a non-stick skillet over medium-low heat and lightly grease it.
- Scoop batter into the pan, cover with a lid, and cook for 3-4 minutes until golden. Flip gently and cook for an additional 2-3 minutes.
- Serve warm with your favorite toppings.
