Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your standard muffin tin with liners.
  2. Sift together the flour, baking powder, and salt in a mixing bowl. Set aside.
  3. Cream together the softened butter and sugar until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Then, stir in the fresh orange zest and juice.
  5. Alternately add the flour mixture and milk to the butter mixture, starting and ending with the flour, mixing gently until just combined.
  6. Divide the batter evenly into your prepared muffin tin, filling each liner about two-thirds full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cupcakes to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
