Ingredients

- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- A pinch of salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 cup fresh blueberries
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, mix the milk, egg, and melted butter until combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined (lumps are okay).
- Fold in the blueberries.
- Preheat a skillet over medium heat and lightly grease it with butter.
- Pour a ladle of batter onto the skillet for each pancake. Cook until bubbles rise to the surface (about 2-3 minutes), then flip and cook until golden brown, about 2 minutes more.
- Keep pancakes warm in a low oven while finishing the batch.
- Serve stacked high with maple syrup and extra blueberries on top.
Notes
Avoid pressing the pancakes down while cooking to keep them fluffy.
