Description

Deliciously fluffy pancakes bursting with sweet blueberries, perfect for breakfast and family gatherings.


Ingredients

  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • A pinch of salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 cup fresh blueberries

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, mix the milk, egg, and melted butter until combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined (lumps are okay).
  4. Fold in the blueberries.
  5. Preheat a skillet over medium heat and lightly grease it with butter.
  6. Pour a ladle of batter onto the skillet for each pancake. Cook until bubbles rise to the surface (about 2-3 minutes), then flip and cook until golden brown, about 2 minutes more.
  7. Keep pancakes warm in a low oven while finishing the batch.
  8. Serve stacked high with maple syrup and extra blueberries on top.

Notes

Avoid pressing the pancakes down while cooking to keep them fluffy.
