Ingredients

  • 1 cup dark chocolate (70% or higher)
  • 1/2 cup unsweetened cocoa powder
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup freshly shelled pistachios
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup unsalted butter

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch square baking pan by greasing it or lining it with parchment paper.
  2. In a saucepan over low heat, melt the dark chocolate and butter together, stirring until smooth.
  3. In a separate bowl, whisk together the cocoa powder and sugar.
  4. Once the chocolate is slightly cooled, whisk in the eggs until smooth.
  5. Add the cocoa and sugar mixture and fold gently until just combined.
  6. Stir in the pistachios and shredded coconut.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for about 25-30 minutes or until a toothpick comes out with a few moist crumbs.
  9. Let it cool completely in the pan on a wire rack, then lift out, slice into squares, and enjoy!

Notes

For a vegan version, substitute dairy-free chocolate and butter. You can also use almond flour instead of cocoa powder for a nuttier flavor.
