- 1 cup dark chocolate (70% or higher)
- 1/2 cup unsweetened cocoa powder
- 3 large eggs
- 1 cup granulated sugar
- 1/2 cup freshly shelled pistachios
- 1/2 cup unsweetened shredded coconut
- 1/2 cup unsalted butter
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8-inch square baking pan by greasing it or lining it with parchment paper.
- In a saucepan over low heat, melt the dark chocolate and butter together, stirring until smooth.
- In a separate bowl, whisk together the cocoa powder and sugar.
- Once the chocolate is slightly cooled, whisk in the eggs until smooth.
- Add the cocoa and sugar mixture and fold gently until just combined.
- Stir in the pistachios and shredded coconut.
- Pour the batter into the prepared pan and smooth the top.
- Bake for about 25-30 minutes or until a toothpick comes out with a few moist crumbs.
- Let it cool completely in the pan on a wire rack, then lift out, slice into squares, and enjoy!
Notes
For a vegan version, substitute dairy-free chocolate and butter. You can also use almond flour instead of cocoa powder for a nuttier flavor.
