Ingredients

  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • ½ cup milk
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ cup crushed pretzels
  • Flamin’ Hot seasoning (1-2 teaspoons, adjustable to taste)
  • Coarse salt, for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with butter.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well, then mix in the milk.
  4. Sift together the flour, baking powder, and baking soda in another bowl.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Gently fold in the crushed pretzels and Flamin’ Hot seasoning.
  7. Fill the muffin cups about two-thirds full and sprinkle tops with extra pretzel bits and a hint of salt.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Allow to cool for five minutes before transferring to a wire rack.

Notes

For a gluten-free version, substitute all-purpose flour with almond or coconut flour, adjusting liquid as necessary. Use applesauce as a binder if out of eggs.
