Description

  • 1 cup sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 4 oz cream cheese
  • 1 cup Cheetos Flamin’ Hot, crushed
  • 1 cup whole milk
  • 2 large eggs, beaten
  • 4 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Cook the macaroni according to package instructions until al dente; drain and set aside.
  2. In a saucepan over medium heat, melt the butter. Stir in the flour to create a roux, cooking for about a minute.
  3. Slowly whisk in the milk, stirring until thickened. Add cream cheese, cheddar, and mozzarella, continuing to stir until melted.
  4. Fold in one cup of crushed Cheetos into the cheese sauce, reserving some for topping.
  5. In a large bowl, mix together the cooked macaroni, cheese sauce, and beaten eggs until evenly combined.
  6. Preheat oven to 375°F (190°C) and grease a muffin tin. Fill each muffin cup to the top with the macaroni mixture and sprinkle with remaining crushed Cheetos.
  7. Bake for 15-20 minutes until golden and slightly puffed. Allow to cool slightly before serving.

Notes

For a gluten-free version, substitute elbow macaroni with gluten-free pasta. Use a mix of gouda or pepper jack cheese for different flavor profiles.
