- 2 cups elbow macaroni
- 1 cup sharp cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 4 oz cream cheese
- 1 cup Cheetos Flamin’ Hot, crushed
- 1 cup whole milk
- 2 large eggs, beaten
- 4 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Cook the macaroni according to package instructions until al dente; drain and set aside.
- In a saucepan over medium heat, melt the butter. Stir in the flour to create a roux, cooking for about a minute.
- Slowly whisk in the milk, stirring until thickened. Add cream cheese, cheddar, and mozzarella, continuing to stir until melted.
- Fold in one cup of crushed Cheetos into the cheese sauce, reserving some for topping.
- In a large bowl, mix together the cooked macaroni, cheese sauce, and beaten eggs until evenly combined.
- Preheat oven to 375°F (190°C) and grease a muffin tin. Fill each muffin cup to the top with the macaroni mixture and sprinkle with remaining crushed Cheetos.
- Bake for 15-20 minutes until golden and slightly puffed. Allow to cool slightly before serving.
Notes
For a gluten-free version, substitute elbow macaroni with gluten-free pasta. Use a mix of gouda or pepper jack cheese for different flavor profiles.
