- 1 lb fresh salmon fillets, boneless
- 2 cups waxy potatoes, diced
- 1 cup leeks, sliced
- 1 cup carrots, diced
- 4 cups vegetable or fish broth
- 1 cup heavy cream
- 2 tablespoons fresh dill, chopped
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Wash and slice the leeks, then dice the potatoes and carrots. Remove any grit from the leeks.
- In a large pot, melt butter over medium heat and sauté the leeks until tender and fragrant, about 3-4 minutes.
- Add the diced potatoes and carrots, then pour in the broth. Bring to a gentle boil, then reduce heat and simmer until the vegetables are tender, around 10-15 minutes.
- Gently fold in the salmon cut into bite-sized pieces and let it simmer for another 5-7 minutes until cooked through.
- Stir in the cream and chopped dill, adjusting seasoning with salt and pepper. Warm through without boiling.
- Serve in bowls, garnished with fresh dill if desired.
Notes
Avoid boiling the soup after adding cream to prevent curdling. Store leftovers in an airtight container for 3 to 4 days.
