A comforting and creamy soup featuring fresh salmon, potatoes, and leeks, perfect for warming the heart on cold evenings.


Ingredients

  • 1 lb fresh salmon fillets, boneless
  • 2 cups waxy potatoes, diced
  • 1 cup leeks, sliced
  • 1 cup carrots, diced
  • 4 cups vegetable or fish broth
  • 1 cup heavy cream
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Wash and slice the leeks, then dice the potatoes and carrots. Remove any grit from the leeks.
  2. In a large pot, melt butter over medium heat and sauté the leeks until tender and fragrant, about 3-4 minutes.
  3. Add the diced potatoes and carrots, then pour in the broth. Bring to a gentle boil, then reduce heat and simmer until the vegetables are tender, around 10-15 minutes.
  4. Gently fold in the salmon cut into bite-sized pieces and let it simmer for another 5-7 minutes until cooked through.
  5. Stir in the cream and chopped dill, adjusting seasoning with salt and pepper. Warm through without boiling.
  6. Serve in bowls, garnished with fresh dill if desired.

Notes

Avoid boiling the soup after adding cream to prevent curdling. Store leftovers in an airtight container for 3 to 4 days.
