A tender filet mignon seared and topped with a rich garlic herb butter, perfect for special occasions and gathering around the table.
Ingredients

- 2 Filet Mignon steaks (1.5 to 2 inches thick)
- 4 tablespoons Unsalted Butter
- 3 cloves Fresh Garlic, crushed
- 1 teaspoon Fresh Thyme, chopped
- 1 teaspoon Fresh Rosemary, chopped
- Salt, to taste
- Black Pepper, to taste
- 2 tablespoons Olive Oil
Instructions
- Remove filet mignon from the refrigerator 30–60 minutes before cooking to bring to room temperature.
- Season both sides generously with salt and freshly cracked pepper.
- Preheat a heavy skillet over medium-high heat and add a drizzle of olive oil.
- Place the filet mignon in the skillet and sear for about 4-5 minutes without moving it.
- Flip the steak, add butter and crushed garlic to the skillet.
- Baste the filet with the melted butter for an additional 4-5 minutes.
- Check the doneness with a meat thermometer; aim for 130°F (medium-rare).
- Remove from skillet and let rest for 5 minutes, adding fresh herbs to the leftover butter.
- Slice the filet and spoon the garlic herb butter over the top before serving.
Notes
For best results, allow the steak to come to room temperature before cooking and ensure your skillet is hot enough for a proper sear.
