Ingredients

  • Heavy Cream
  • Mushrooms (cremini or shiitake)
  • Garlic (minced)
  • White Wine
  • Chicken or Beef Broth
  • Fresh Thyme
  • Fresh Parsley
  • Salt
  • Pepper

Instructions

  1. Bring the filet mignon to room temperature and season with salt and pepper.
  2. In a hot skillet, sear the filet mignon for 3-4 minutes on each side until browned. Remove and let rest.
  3. Sauté the mushrooms in the same skillet until browned, about 5 minutes, then set aside.
  4. Add minced garlic to the skillet and sauté until fragrant.
  5. Deglaze the pan with white wine, reducing it by half.
  6. Add heavy cream and broth, simmering for 5-7 minutes until slightly thickened.
  7. Stir in the sautéed mushrooms and fresh herbs, then season to taste.
  8. Plate the rested filet mignon and spoon the creamy sauce over each steak.

Notes

For a lighter version, you can substitute half-and-half for heavy cream and use vegetable broth for a vegetarian option.
