Instructions
- Preheat the oven to 350°F (175°C).
- Mix the dry ingredients: in a bowl, whisk together flour, cocoa powder, baking soda, and salt.
- Cream the butter and sugars until light and fluffy.
- Add the ginger and egg, mixing until well combined.
- Combine wet and dry ingredients until just mixed.
- Fold in dark chocolate chunks.
- Scoop dough onto a lined baking sheet and roll in sugar.
- Bake for 10-12 minutes until edges are set.
- Cool on a wire rack before serving.
Notes
For a gluten-free version, substitute all-purpose flour with almond or oat flour. Adjust baking time for larger cookies.
