Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the dry ingredients: in a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. Cream the butter and sugars until light and fluffy.
  4. Add the ginger and egg, mixing until well combined.
  5. Combine wet and dry ingredients until just mixed.
  6. Fold in dark chocolate chunks.
  7. Scoop dough onto a lined baking sheet and roll in sugar.
  8. Bake for 10-12 minutes until edges are set.
