Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
- In a separate bowl, beat the eggs, add the milk and melted butter, and mix well.
- Gradually add the wet ingredients to the dry mixture, stirring until just combined.
- Fold in the diced apples until evenly distributed.
- Fill each muffin cup about two-thirds full and bake for 18-20 minutes.
- Cool in the pan for five minutes before transferring to a wire rack. Serve warm.
