Ingredients

  • Boneless chicken (breast or thighs)
  • Fresh garlic
  • Mushrooms (cremini or shiitake)
  • Onion
  • Cream cheese or cheese of your choice
  • Fresh parsley or thyme
  • Breadcrumbs

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a baking sheet with parchment paper.
  2. Finely chop the mushrooms and onions. Sauté them in a skillet with olive oil until tender and fragrant.
  3. In a large bowl, combine the sautéed mixture with cream cheese and chopped herbs.
  4. Pound the chicken to an even thickness and season with salt, pepper, and garlic.
  5. Place a spoonful of the mushroom mixture at one end of each chicken piece, roll tightly, and secure with toothpicks.
  6. Dip each roll in breadcrumbs.
  7. Arrange on the baking sheet, drizzle with olive oil, and bake for 25-30 minutes until golden brown.
  8. Optional: Broil for an additional 2–3 minutes for extra crispiness.
