Ingredients
- Boneless chicken (breast or thighs)
- Fresh garlic
- Mushrooms (cremini or shiitake)
- Onion
- Cream cheese or cheese of your choice
- Fresh parsley or thyme
- Breadcrumbs
Instructions
- Preheat the oven to 375°F (190°C) and prepare a baking sheet with parchment paper.
- Finely chop the mushrooms and onions. Sauté them in a skillet with olive oil until tender and fragrant.
- In a large bowl, combine the sautéed mixture with cream cheese and chopped herbs.
- Pound the chicken to an even thickness and season with salt, pepper, and garlic.
- Place a spoonful of the mushroom mixture at one end of each chicken piece, roll tightly, and secure with toothpicks.
- Dip each roll in breadcrumbs.
- Arrange on the baking sheet, drizzle with olive oil, and bake for 25-30 minutes until golden brown.
- Optional: Broil for an additional 2–3 minutes for extra crispiness.
Notes
Using an instant-read thermometer, aim for an internal temperature of 165°F (74°C) for perfectly juicy chicken.
