- 200g dark chocolate (70% cacao or higher)
- 150ml freshly brewed espresso
- 100g unsalted butter
- 200g granulated sugar
- 4 large eggs
- 150g all-purpose flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- A pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a round cake pan.
- Melt the dark chocolate and butter together in a heatproof bowl over simmering water, or in the microwave in short increments.
- Whisk together the sugar and eggs in a separate bowl until pale and fluffy.
- Mix in the melted chocolate mixture and espresso, followed by the vanilla extract.
- In another bowl, combine the flour, baking powder, and salt. Gently fold these dry ingredients into the wet mix.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- For the ganache, heat cream until hot but not boiling, pour over chopped dark chocolate, stir until smooth, and let it cool slightly before drizzling over the cake.
