Ingredients

  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 cups granulated sugar
  • 1 cup espresso or strong brewed coffee
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1 cup whipping cream (for the ganache)
  • 8 ounces dark chocolate, chopped (for the ganache)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, cream the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, blending well after each addition.
  4. Stir in the freshly brewed espresso into the wet mixture.
  5. Gradually add the dry mixture to the wet mixture, alternating with the milk, commencing and concluding with the dry ingredients.
  6. Divide the batter evenly into the prepared pans.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cakes cool in their pans for about 15 minutes before transferring them to a wire rack to cool completely.
  9. For the ganache, heat the whipping cream until just simmering, then stir in the chopped dark chocolate until smooth and glossy.
  10. Assemble by placing one layer of the cake on a serving platter, spreading ganache between the layers, and covering the top with more ganache.
  11. Optional: Garnish with dark chocolate shavings or a sprinkle of sea salt.
