- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 1/2 cups granulated sugar
- 1 cup espresso or strong brewed coffee
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1 cup whipping cream (for the ganache)
- 8 ounces dark chocolate, chopped (for the ganache)
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, cream the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, blending well after each addition.
- Stir in the freshly brewed espresso into the wet mixture.
- Gradually add the dry mixture to the wet mixture, alternating with the milk, commencing and concluding with the dry ingredients.
- Divide the batter evenly into the prepared pans.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Let the cakes cool in their pans for about 15 minutes before transferring them to a wire rack to cool completely.
- For the ganache, heat the whipping cream until just simmering, then stir in the chopped dark chocolate until smooth and glossy.
- Assemble by placing one layer of the cake on a serving platter, spreading ganache between the layers, and covering the top with more ganache.
- Optional: Garnish with dark chocolate shavings or a sprinkle of sea salt.
