- 3 large eggs
- 1 cup eggnog
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, whisk together the eggs and granulated sugar until light and fluffy. Stir in eggnog and melted butter.
- In a separate bowl, sift together flour, baking powder, salt, cinnamon, and nutmeg.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for about 60-70 minutes.
- Check for doneness with a toothpick. Let cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
- Slice and serve warm or at room temperature.
Notes
For a vegan variant, replace eggs with flax eggs or applesauce. You can also use whole wheat or gluten-free flour if desired.
