Instructions
- Preheat your skillet over medium heat and drizzle with olive oil. Toast the bread slices until golden brown, about 3-4 minutes per side.
- Cook the eggs in the same skillet. Fry them to your preference or poach by swirling water with vinegar and gently adding the eggs; cook for about 3-4 minutes.
- Spread a generous layer of ricotta on each toasted slice of bread. Top with the cooked egg and season with salt and pepper, then sprinkle with freshly chopped herbs.
- Finish with a drizzle of olive oil and optionally add lemon zest or red pepper flakes for extra flavor before serving.
Notes
