Ingredients

  • 2 cups fresh tomatoes (or canned diced tomatoes)
  • 1 cup mushrooms (cremini or shiitake)
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 medium onion, diced
  • 1/4 cup fresh basil, chopped
  • 1 teaspoon fresh thyme
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Kale or spinach (optional, for added greens)

Instructions

  1. In a large pot, heat olive oil over medium heat and add the diced onion. Sauté until translucent, about 5 minutes.
  2. Add minced garlic and stir for 1 minute.
  3. Stir in the mushrooms and sauté until they release their juices and turn golden, about 5-7 minutes.
  4. Add the diced tomatoes and cook for 3-4 minutes to meld flavors.
  5. Pour in the vegetable broth, bring to a gentle boil, then lower heat and let simmer for 20-25 minutes.
  6. Add fresh herbs, salt, and pepper to taste.
  7. If using, add leafy greens during the final 5 minutes of cooking.
  8. Serve hot, garnished with fresh basil or grated Parmesan if desired.

Notes

For deeper flavor, roast the tomatoes beforehand. A splash of balsamic vinegar can also enhance the taste.
