Ingredients

- 2 cups fresh tomatoes (or canned diced tomatoes)
- 1 cup mushrooms (cremini or shiitake)
- 4 cloves garlic, minced
- 4 cups vegetable broth
- 1 medium onion, diced
- 1/4 cup fresh basil, chopped
- 1 teaspoon fresh thyme
- 2 tablespoons olive oil
- Salt and pepper to taste
- Kale or spinach (optional, for added greens)
Instructions
- In a large pot, heat olive oil over medium heat and add the diced onion. Sauté until translucent, about 5 minutes.
- Add minced garlic and stir for 1 minute.
- Stir in the mushrooms and sauté until they release their juices and turn golden, about 5-7 minutes.
- Add the diced tomatoes and cook for 3-4 minutes to meld flavors.
- Pour in the vegetable broth, bring to a gentle boil, then lower heat and let simmer for 20-25 minutes.
- Add fresh herbs, salt, and pepper to taste.
- If using, add leafy greens during the final 5 minutes of cooking.
- Serve hot, garnished with fresh basil or grated Parmesan if desired.
Notes
For deeper flavor, roast the tomatoes beforehand. A splash of balsamic vinegar can also enhance the taste.
