- 1 lb ground turkey
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1–2 bell peppers, chopped
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn (fresh or frozen)
- 4 cups chicken broth
- 1 tbsp cumin
- 1 tbsp chili powder
- 1 tsp paprika
- Salt to taste
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic; sauté for 3-4 minutes until softened.
- Add ground turkey, breaking it apart with a wooden spoon. Cook for 5-7 minutes until browned.
- Stir in chopped bell peppers and sauté for an additional 2-3 minutes.
- Pour in diced tomatoes (with juices), black beans, corn, and chicken broth. Stir in cumin, chili powder, paprika, and salt.
- Bring to a gentle boil, then reduce heat to low. Cover and simmer for 20 minutes.
- Taste and adjust seasoning as needed, adding more spices if desired.
- Serve hot, garnished with cilantro and a squeeze of lime juice.
