  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 12 bell peppers, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 4 cups chicken broth
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1 tsp paprika
  • Salt to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic; sauté for 3-4 minutes until softened.
  2. Add ground turkey, breaking it apart with a wooden spoon. Cook for 5-7 minutes until browned.
  3. Stir in chopped bell peppers and sauté for an additional 2-3 minutes.
  4. Pour in diced tomatoes (with juices), black beans, corn, and chicken broth. Stir in cumin, chili powder, paprika, and salt.
  5. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 20 minutes.
  6. Taste and adjust seasoning as needed, adding more spices if desired.
  7. Serve hot, garnished with cilantro and a squeeze of lime juice.
