Ingredients

- 1 cup sushi rice
- 1 pound fresh salmon
- ¼ cup teriyaki sauce
- 4 nori sheets
- ½ cup cream cheese
- 1 avocado, sliced or cubed
- 2 green onions, chopped
Instructions
- Rinse sushi rice under cold water until clear, then cook according to package instructions. Mix with rice vinegar, sugar, and salt.
- Preheat oven to 350°F (175°C). Cut salmon into bite-sized pieces and marinate with teriyaki sauce.
- Spread cooked sushi rice in a baking dish, layer marinated salmon on top, add cream cheese, and drizzle with more teriyaki sauce. Cover with foil and bake for 20 minutes.
- Remove foil, top with avocado and green onions, sprinkle panko breadcrumbs if desired, and broil for an additional 2-3 minutes.
- Allow to cool, scoop portions, and serve warm or at room temperature.
Notes
For a vegetarian twist, substitute salmon with grilled chicken or tofu. You can also use short-grain rice in place of sushi rice if needed.
