A comforting fusion of traditional sushi elements transformed into a cozy bake with teriyaki salmon, perfect for family gatherings.


Ingredients

  • 1 cup sushi rice
  • 1 pound fresh salmon
  • ¼ cup teriyaki sauce
  • 4 nori sheets
  • ½ cup cream cheese
  • 1 avocado, sliced or cubed
  • 2 green onions, chopped

Instructions

  1. Rinse sushi rice under cold water until clear, then cook according to package instructions. Mix with rice vinegar, sugar, and salt.
  2. Preheat oven to 350°F (175°C). Cut salmon into bite-sized pieces and marinate with teriyaki sauce.
  3. Spread cooked sushi rice in a baking dish, layer marinated salmon on top, add cream cheese, and drizzle with more teriyaki sauce. Cover with foil and bake for 20 minutes.
  4. Remove foil, top with avocado and green onions, sprinkle panko breadcrumbs if desired, and broil for an additional 2-3 minutes.
  5. Allow to cool, scoop portions, and serve warm or at room temperature.

Notes

For a vegetarian twist, substitute salmon with grilled chicken or tofu. You can also use short-grain rice in place of sushi rice if needed.
