Description
A comforting dish of spinach and ricotta-filled lasagna noodles, rolled up and baked with marinara and melted cheese.

- 12 lasagna noodles
- 2 cups fresh spinach
- 15 oz ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 large egg
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp fresh basil, chopped
- 1 tsp fresh oregano, chopped
- 2 cups marinara sauce
Instructions
- Boil salted water and cook lasagna noodles according to package instructions until al dente. Drain and lay flat.
- In a mixing bowl, combine ricotta, spinach, garlic, egg, half the mozzarella, half the Parmesan, salt, pepper, and herbs.
- Spread marinara sauce at the bottom of a baking dish. Take a noodle, spread filling along it, roll tightly, and place seam-side down in the dish.
- Pour remaining marinara sauce over the roll-ups and top with the rest of the mozzarella and Parmesan. Cover with foil and bake at 375°F (190°C) for 25 minutes.
- Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden. Let rest for 10 minutes before serving.

Customize with vegetables like mushrooms or peppers as desired.
