- 1 lb shrimp, fresh or frozen
- 8 oz lo mein noodles
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1-inch piece ginger, minced
- 1 cup bok choy, chopped
- 1 bell pepper, sliced
- 1 carrot, julienned
- 1 cup snap peas
- 2 scallions, chopped
- 1 tbsp cornstarch
- 1 tsp honey or brown sugar (optional)
- 1 tbsp oil for sautéing
Instructions
- Prepare the noodles by cooking them according to package instructions until al dente. Rinse under cool water and set aside.
- In a small bowl, combine soy sauce, sesame oil, and a splash of water. Add honey or brown sugar if desired.
- In a large skillet or wok, heat oil over medium-high heat. Add garlic and ginger, cooking until fragrant, about 30 seconds.
- Add the vegetables and stir-fry for 3-5 minutes until just tender.
- Push vegetables to one side and add shrimp. Cook until they are pink and opaque, about 2-3 minutes.
- Add the drained noodles and sauce, tossing everything together until evenly coated. If needed, add a splash of water or soy sauce to moisten.
- Garnish with chopped scallions and sesame seeds before serving hot.
Notes
For added crunch, consider tossing in chopped peanuts. You can substitute shrimp with chicken or tofu for different protein options.
