- 4 large fresh tomatoes (or canned)
- 2 tablespoons olive oil
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 4 large eggs
- 100g feta cheese, crumbled
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon chili flakes
- Fresh parsley or cilantro, for garnish
Instructions
- In a large skillet, heat olive oil over medium heat. Add onion and sauté until translucent, about 5 minutes. Stir in garlic and cook until fragrant, around 1-2 minutes.
- Add fresh or canned tomatoes along with a pinch of salt. Simmer for 10-15 minutes, allowing it to thicken slightly. Stir in cumin and paprika in the last few minutes.
- Create small wells in the mixture and crack an egg into each well. Cover the skillet and cook for 5-7 minutes until the whites are set but yolks remain runny.
- Top with crumbled feta and let soften before serving.
- Garnish with fresh herbs and serve with crusty bread.
Notes
To customize, consider adding vegetables like bell peppers or spinach, or substitute feta with goat cheese.
