Description

A comforting dish of poached eggs nestled in a spiced tomato sauce, topped with creamy feta cheese.


Ingredients

  • 4 large fresh tomatoes (or canned)
  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 large eggs
  • 100g feta cheese, crumbled
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili flakes
  • Fresh parsley or cilantro, for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add onion and sauté until translucent, about 5 minutes. Stir in garlic and cook until fragrant, around 1-2 minutes.
  2. Add fresh or canned tomatoes along with a pinch of salt. Simmer for 10-15 minutes, allowing it to thicken slightly. Stir in cumin and paprika in the last few minutes.
  3. Create small wells in the mixture and crack an egg into each well. Cover the skillet and cook for 5-7 minutes until the whites are set but yolks remain runny.
  4. Top with crumbled feta and let soften before serving.
  5. Garnish with fresh herbs and serve with crusty bread.

Notes

To customize, consider adding vegetables like bell peppers or spinach, or substitute feta with goat cheese.
