Ingredients

- 4 small sugar or pie pumpkins
- 1 lb ground beef (or turkey, chicken, or lentils for vegetarian option)
- 1 cup pizza sauce
- 1 cup mozzarella cheese, shredded (plus more for topping)
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp garlic powder
- Salt, to taste
- 1/2 cup breadcrumbs (seasoned or panko)
- 1 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C). Cut off the tops of the pumpkins and scoop out the seeds and insides.
- In a skillet, heat olive oil over medium heat and add the ground meat. Sauté until fully cooked, about 7–10 minutes.
- Add garlic to the meat and sauté for an additional minute.
- Stir in the pizza sauce, dried herbs, and any optional veggies. Simmer for 5 minutes.
- Mix in half of the cheese and set aside.
- Fill each pumpkin generously with the mixture and top with breadcrumbs and remaining cheese.
- Place in a baking dish with a splash of water at the bottom and cover with foil. Bake for about 30 minutes.
- Remove the foil and bake for another 15 minutes, or until the cheese is bubbly and pumpkins are tender.
