Delightful mini pumpkins stuffed with a savory pizza-inspired filling, perfect for Halloween gatherings and family meals.


Ingredients

  • 4 small sugar or pie pumpkins
  • 1 lb ground beef (or turkey, chicken, or lentils for vegetarian option)
  • 1 cup pizza sauce
  • 1 cup mozzarella cheese, shredded (plus more for topping)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • Salt, to taste
  • 1/2 cup breadcrumbs (seasoned or panko)
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C). Cut off the tops of the pumpkins and scoop out the seeds and insides.
  2. In a skillet, heat olive oil over medium heat and add the ground meat. Sauté until fully cooked, about 7–10 minutes.
  3. Add garlic to the meat and sauté for an additional minute.
  4. Stir in the pizza sauce, dried herbs, and any optional veggies. Simmer for 5 minutes.
  5. Mix in half of the cheese and set aside.
  6. Fill each pumpkin generously with the mixture and top with breadcrumbs and remaining cheese.
  7. Place in a baking dish with a splash of water at the bottom and cover with foil. Bake for about 30 minutes.
  8. Remove the foil and bake for another 15 minutes, or until the cheese is bubbly and pumpkins are tender.
