A warm and comforting beef stew that’s perfect for gathering family and friends around the dinner table.
Ingredients

- 2 lbs chuck roast or stewing beef
- 4 carrots, chopped
- 3 potatoes, diced
- 1 onion, chopped
- 8 oz cremini or button mushrooms, sliced
- 4 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 cup red wine (optional)
- 2 tsp fresh thyme
- 2 tsp fresh rosemary
- Salt and pepper to taste
Instructions
- Heat oil in a heavy-bottomed pot and season the beef with salt and pepper. Sear until brown on all sides, then remove.
- Add onions, garlic, and any other aromatic vegetables to the pot, softening them and scraping up browned bits.
- Toss in the carrots, potatoes, and mushrooms, stir in the tomato paste, and let mingle for a couple of minutes.
- Return the beef to the pot, add beef broth and red wine, and bring to a gentle boil.
- Reduce heat to low, cover, and let it simmer for 90 to 120 minutes, stirring occasionally.
- Adjust seasoning with salt, pepper, and fresh herbs near the end of cooking.
- Ladle into bowls and serve with bread for dipping.
Notes
You can personalize the stew by adding seasonal ingredients such as peas or corn during the last 10 minutes of cooking.
