Ingredients

  • 2 boneless chicken breasts or thighs
  • 1 cup marinara sauce
  • 1 cup freshly grated mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • 1 cup whole-grain or panko breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 egg
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the chicken by pounding it to about half an inch thick for even cooking.
  3. In one bowl, mix breadcrumbs with herbs and salt; in another bowl, beat the egg.
  4. Dredge the chicken pieces in the egg, then coat with breadcrumbs, pressing to adhere.
  5. Heat olive oil in a skillet over medium heat and sear each chicken piece for about 3 minutes on each side until golden brown.
  6. In a baking dish, spoon a layer of marinara, place browned chicken, add more sauce, and top with mozzarella and Parmesan.
  7. Bake for about 20 minutes until cheese is bubbly and golden brown.
  8. Let it rest for a few minutes before serving.

Notes

For a vegetarian option, swap chicken for eggplant or mushrooms. Use zucchini strips instead of pasta for a low-carb version.
