- 2 boneless chicken breasts or thighs
- 1 cup marinara sauce
- 1 cup freshly grated mozzarella cheese
- ½ cup freshly grated Parmesan cheese
- 1 cup whole-grain or panko breadcrumbs
- 2 tablespoons olive oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 egg
- Salt to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the chicken by pounding it to about half an inch thick for even cooking.
- In one bowl, mix breadcrumbs with herbs and salt; in another bowl, beat the egg.
- Dredge the chicken pieces in the egg, then coat with breadcrumbs, pressing to adhere.
- Heat olive oil in a skillet over medium heat and sear each chicken piece for about 3 minutes on each side until golden brown.
- In a baking dish, spoon a layer of marinara, place browned chicken, add more sauce, and top with mozzarella and Parmesan.
- Bake for about 20 minutes until cheese is bubbly and golden brown.
- Let it rest for a few minutes before serving.
Notes
For a vegetarian option, swap chicken for eggplant or mushrooms. Use zucchini strips instead of pasta for a low-carb version.
