- 1/4 cup honey
- 3 cloves garlic, minced
- 2 tablespoons rice vinegar

Instructions
- Prepare the Marinade: In a bowl, combine soy sauce, honey, minced garlic, rice vinegar, and sesame oil. Whisk until thoroughly mixed.
- Marinate the Chicken: Cut chicken thighs into 1-2 inch pieces, add them to the marinade, mixing to coat. Cover and refrigerate for at least 30 minutes, preferably 2 hours.
- Soak Skewers: If using wooden skewers, soak them in water for at least 30 minutes.
- Skewer the Chicken: Thread the marinated chicken onto skewers, leaving space between each piece.
- Preheat the Grill: Heat grill to medium-high. Ensure grates are clean and lightly oiled.
- Grill the Skewers: Cook skewers for about 10-12 minutes, rotating every few minutes until caramelized and reach an internal temperature of 165°F.
- Serve with Garnish: Remove from the grill and allow to rest for a few minutes. Before serving, sprinkle with chopped green onions and sesame seeds.
Notes
For extra flavor, brush with leftover marinade during the last minute of cooking, ensuring it’s boiled first.
