Ingredients

  • Fresh cucumbers, sliced
  • Ripe tomatoes, cut into wedges
  • Fresh mozzarella, torn into pieces
  • Basil leaves, torn
  • Extra virgin olive oil
  • Sea salt
  • Freshly cracked black pepper
  • Balsamic vinegar (optional)

Instructions

  1. Wash the cucumbers and tomatoes thoroughly. Slice the cucumbers into thin rounds and cut the tomatoes into wedges or thick slices.
  2. In a large bowl, combine the cucumbers, tomatoes, mozzarella, and basil leaves. Gently toss to mix.
  3. Pour a generous drizzle of extra virgin olive oil over the salad, followed by a sprinkle of sea salt and cracked black pepper to taste. If using, add balsamic vinegar at this point.
  4. Gently toss to combine all ingredients without bruising the delicate tomatoes and mozzarella.
  5. Serve on a large platter and garnish with additional basil leaves or a light sprinkle of flaky salt just before serving.
