Ingredients
- Fresh cucumbers, sliced
- Ripe tomatoes, cut into wedges
- Fresh mozzarella, torn into pieces
- Basil leaves, torn
- Extra virgin olive oil
- Sea salt
- Freshly cracked black pepper
- Balsamic vinegar (optional)
Instructions
- Wash the cucumbers and tomatoes thoroughly. Slice the cucumbers into thin rounds and cut the tomatoes into wedges or thick slices.
- In a large bowl, combine the cucumbers, tomatoes, mozzarella, and basil leaves. Gently toss to mix.
- Pour a generous drizzle of extra virgin olive oil over the salad, followed by a sprinkle of sea salt and cracked black pepper to taste. If using, add balsamic vinegar at this point.
- Gently toss to combine all ingredients without bruising the delicate tomatoes and mozzarella.
- Serve on a large platter and garnish with additional basil leaves or a light sprinkle of flaky salt just before serving.
