- 2 Cucumbers, sliced
- 4 Fresh Tomatoes, cut into wedges
- 8 oz Fresh Mozzarella, torn into pieces
- Fresh Basil leaves, whole or chopped
- 3 tbsp Extra Virgin Olive Oil
- Sea Salt, to taste
- Freshly Cracked Black Pepper, to taste
Instructions
- Prepare the vegetables by rinsing cucumbers and tomatoes under cool water. Slice the cucumbers into thin rounds and the tomatoes into wedges.
- Tear or chop the fresh mozzarella into bite-sized pieces.
- In a large salad bowl, combine the cucumbers, tomatoes, and mozzarella, and gently toss them together.
- Drizzle high-quality extra virgin olive oil over the salad.
- Season with sea salt and freshly cracked black pepper to taste.
- Add fresh basil leaves to the salad.
- Let the salad sit for about 10 minutes at room temperature to meld the flavors.
