Instructions
- Preheat your oven to 350°F (175°C).
- Sauté diced onion and bell peppers in olive oil until soft (about 5-7 minutes).
- In a large mixing bowl, whisk together eggs, milk, salt, and pepper.
- Combine hashbrowns, sautéed onion and peppers, and half of the cheese into the egg mixture.
- Transfer to a greased baking dish, spreading evenly.

- Let it cool for 10 minutes before serving.
