Ingredients

- 2 pounds Yukon Gold potatoes (or Russet potatoes)
- 4 cloves fresh garlic, minced
- 4 tablespoons unsalted butter
- 2 tablespoons extra virgin olive oil
- Fresh rosemary or thyme, chopped
- Salt and pepper to taste
Instructions
- Boil the potatoes in salted water until fork-tender, about 15-20 minutes.
- Preheat the oven to 450°F (232°C) and line a baking sheet with parchment paper.
- Drain the cooked potatoes and let them cool slightly.
- Place the potatoes on the baking sheet and gently smash each potato down.
- Melt the butter with minced garlic over medium heat until golden.
- Drizzle the garlic butter over the smashed potatoes and sprinkle with salt, pepper, and herbs.
- Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
- Serve hot and enjoy!
Notes
For a dairy-free variation, replace butter with olive oil. Sweet potatoes can be used for a different twist.
