Ingredients

  • 2 pounds Yukon Gold potatoes (or Russet potatoes)
  • 4 cloves fresh garlic, minced
  • 4 tablespoons unsalted butter
  • 2 tablespoons extra virgin olive oil
  • Fresh rosemary or thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water until fork-tender, about 15-20 minutes.
  2. Preheat the oven to 450°F (232°C) and line a baking sheet with parchment paper.
  3. Drain the cooked potatoes and let them cool slightly.
  4. Place the potatoes on the baking sheet and gently smash each potato down.
  5. Melt the butter with minced garlic over medium heat until golden.
  6. Drizzle the garlic butter over the smashed potatoes and sprinkle with salt, pepper, and herbs.
  7. Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
