  • 1 packet taco seasoning
  • 8 oz cream cheese

  • 1 cup bell peppers, chopped
  • 1 can black beans, drained
  • 1 can diced tomatoes
  • 4 cups chicken or vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced

Instructions

  1. Sauté chopped onions and garlic in a pot over medium heat until fragrant and translucent, about 3-4 minutes.
  2. Add ground beef or turkey, breaking it apart, and cook until browned, about 5-7 minutes. Drain excess fat.
  3. Sprinkle in taco seasoning and cook for another minute.
  4. Stir in diced tomatoes, corn, black beans, and broth. Bring to a gentle simmer, then reduce heat to low.
  5. Once slightly thickened, stir in cream cheese until fully melted.
  6. Taste and adjust seasoning as needed.
  7. Let it simmer for another 10 minutes to allow flavors to meld.
