- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 8 oz cream cheese
- 1 cup corn (fresh or canned)
- 1 cup bell peppers, chopped
- 1 can black beans, drained
- 1 can diced tomatoes
- 4 cups chicken or vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
Instructions
- Sauté chopped onions and garlic in a pot over medium heat until fragrant and translucent, about 3-4 minutes.
- Add ground beef or turkey, breaking it apart, and cook until browned, about 5-7 minutes. Drain excess fat.
- Sprinkle in taco seasoning and cook for another minute.
- Stir in diced tomatoes, corn, black beans, and broth. Bring to a gentle simmer, then reduce heat to low.
- Once slightly thickened, stir in cream cheese until fully melted.
- Taste and adjust seasoning as needed.
- Let it simmer for another 10 minutes to allow flavors to meld.
