A rich and moist cake combining dark chocolate and crunchy pistachios, perfect for any occasion.


Ingredients

  • 200g dark chocolate (at least 70% cocoa)
  • 100g unsalted butter
  • 200g granulated sugar
  • 3 large eggs
  • 150g almond flour
  • 100g roasted and chopped pistachios
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a round cake pan.
  2. Melt the dark chocolate and butter together in a heatproof bowl over a double boiler or in the microwave. Stir until smooth and let cool slightly.
  3. In a large bowl, whisk together eggs and sugar until fluffy, then add the cooled chocolate mixture and vanilla extract.
  4. In another bowl, whisk together almond flour, baking powder, and salt. Gradually add to the wet ingredients until just combined.
  5. Fold in chopped pistachios until evenly distributed.
  6. Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick comes out clean.
  7. Cool the cake in the pan for 10 minutes before transferring to a wire rack to cool completely.
  8. Dust with powdered sugar or serve with whipped cream and additional pistachios.
