- 200g dark chocolate (at least 70% cocoa)
- 100g unsalted butter
- 200g granulated sugar
- 3 large eggs
- 150g almond flour
- 100g roasted and chopped pistachios
- 1 tsp baking powder
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a round cake pan.
- Melt the dark chocolate and butter together in a heatproof bowl over a double boiler or in the microwave. Stir until smooth and let cool slightly.
- In a large bowl, whisk together eggs and sugar until fluffy, then add the cooled chocolate mixture and vanilla extract.
- In another bowl, whisk together almond flour, baking powder, and salt. Gradually add to the wet ingredients until just combined.
- Fold in chopped pistachios until evenly distributed.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick comes out clean.
- Cool the cake in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Dust with powdered sugar or serve with whipped cream and additional pistachios.
