- 2 cups roasted pumpkin, cubed
- 1 cup feta cheese
- 1/2 cup cream cheese
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh thyme or rosemary
- 1 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
Instructions
- Preheat the oven to 400°F (205°C). Toss pumpkin cubes with olive oil, salt, and pepper. Roast for 25-30 minutes until tender and caramelized.
- In a food processor, combine the roasted pumpkin, feta, cream cheese, garlic, and olive oil. Blend until smooth.
- Add herbs, smoked paprika, and cayenne; blend again to combine.
- Taste and adjust seasoning, adding more cream cheese for creaminess or lemon juice for tanginess.
- Transfer to a bowl and refrigerate for at least 1 hour before serving.
- Serve with a drizzle of olive oil and a sprinkle of smoked paprika. Enjoy with veggies, pita chips, or toasted bread.
Notes
You can use canned pumpkin puree as a shortcut. Adjust herbs and spices to your taste based on preference.
