Ingredients

  • 1 cup feta cheese
  • 1/2 cup cream cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme or rosemary
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Preheat the oven to 400°F (205°C). Toss pumpkin cubes with olive oil, salt, and pepper. Roast for 25-30 minutes until tender and caramelized.
  2. In a food processor, combine the roasted pumpkin, feta, cream cheese, garlic, and olive oil. Blend until smooth.
  3. Add herbs, smoked paprika, and cayenne; blend again to combine.
  4. Taste and adjust seasoning, adding more cream cheese for creaminess or lemon juice for tanginess.
  5. Transfer to a bowl and refrigerate for at least 1 hour before serving.
  6. Serve with a drizzle of olive oil and a sprinkle of smoked paprika. Enjoy with veggies, pita chips, or toasted bread.

Notes

You can use canned pumpkin puree as a shortcut. Adjust herbs and spices to your taste based on preference.
