Description

A magical breakfast recipe featuring soft brioche or challah bread coated in crunchy cornflakes, flavored with cinnamon and maple syrup.

Ingredients

Scale
  • 4 large eggs
  • 1 cup whole milk (or almond/oat milk)
  • 1 teaspoon vanilla extract
  • 1 tablespoon cinnamon
  • 2 cups cornflakes (crushed)
  • Thick-sliced brioche or challah bread
  • Maple syrup (for drizzling)
  • Butter (for cooking)
  • Powdered sugar (optional, for dusting)
  • Fresh berries or whipped cream (optional, for serving)

Instructions

  1. In a medium bowl, whisk together eggs, milk, vanilla extract, and cinnamon until fully blended.
  2. Crush cornflakes in a plastic bag until they resemble breadcrumbs.
  3. Heat a skillet over medium heat and melt butter in it.
  4. Dip each slice of bread into the custard mixture, soaking briefly on each side.
  5. Press the wetted bread into the crushed cornflakes to coat evenly.
  6. Cook the coated bread slices in the skillet for about 3-4 minutes on each side until golden brown and crispy.
  7. Transfer to a warm plate, drizzle with maple syrup, and dust with powdered sugar. Serve with fresh berries or whipped cream if desired.

Notes

For a vegan version, replace eggs with a mixture of ground flaxseed and water. Ensure the skillet is not overcrowded for even cooking.
