Instructions
- Heat olive oil in a large pot over medium heat. Add minced garlic and chopped onions, sauté for 3-4 minutes until aromatic.
- Add chopped carrots and celery, sauté for another 5-7 minutes until softened.
- Pour in vegetable broth and bring to a gentle boil, then reduce heat to a simmer.
- Incorporate leafy greens and herbs, letting it bubble for another 10-15 minutes.
- Season with salt, pepper, and optional red pepper flakes before serving.
- Serve hot, garnished with fresh herbs or a squeeze of lemon.
