  • 12 cups leafy greens (kale or spinach)
  • 1 cup mushrooms (shiitake or cremini)
  • Fresh parsley, thyme, or basil
  • Salt and black pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add minced garlic and chopped onions, sauté for 3-4 minutes until aromatic.
  2. Add chopped carrots and celery, sauté for another 5-7 minutes until softened.
  3. Pour in vegetable broth and bring to a gentle boil, then reduce heat to a simmer.
  4. Incorporate leafy greens and herbs, letting it bubble for another 10-15 minutes.
  5. Season with salt, pepper, and optional red pepper flakes before serving.
  6. Serve hot, garnished with fresh herbs or a squeeze of lemon.
