Ingredients

  • 2 apples (Honeycrisp or Granny Smith), cored and sliced
  • 1 cup dried cranberries
  • 1 cup carrots, grated
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • Poppy seeds or nuts (for garnish)

Instructions

  1. Finely slice or shred the cabbage using a sharp knife or a food processor.
  2. Core and slice your apples, tossing them with lemon juice to prevent browning.
  3. Grate the carrots and add to the bowl.
  4. In a mixing bowl, combine mayonnaise, apple cider vinegar, sugar, salt, and pepper.
  5. In a large bowl, combine the cabbage, apples, carrots, and cranberries, then pour the dressing over the top and fold gently.
