- Reserved pasta water, as needed
Instructions
- Cook the pasta: Boil salted water, add rotini, and cook according to package instructions until al dente. Drain and reserve 1 cup of pasta water.
- Sauté the aromatics: Heat olive oil in a skillet over medium heat, add garlic, and sauté for about 30 seconds.
- Add the mushrooms: Toss in sliced mushrooms and sauté until golden brown, about 5-7 minutes.
- Incorporate tomato sauce: Pour in tomato sauce and stir; bring to a gentle simmer. Adjust with reserved pasta water if too thick.
- Season with herbs: Add torn basil and oregano to the sauce.
- Combine the pasta: Once sauce has simmered for 10 minutes, fold in the cooked rotini.
- Finishing touches: Sprinkle with Parmesan cheese and cracked black pepper; drizzle with olive oil and serve.
