Description

A creamy, vibrant hummus made with roasted red peppers that brings joy and warmth to any gathering.


Ingredients

  • 1 can chickpeas, rinsed and drained
  • 2 roasted red peppers
  • 1/4 cup tahini
  • 1 garlic clove
  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. If using dried chickpeas, soak overnight and cook until tender. For canned, simply rinse and drain.
  2. Roast your own red peppers by laying them on a baking sheet, brushing with olive oil, and roasting at 450°F until charred.
  3. In a food processor, combine rinsed chickpeas, roasted red peppers, tahini, garlic, lemon juice, cumin, salt, and olive oil.
  4. Blend until smooth, adding water or more olive oil gradually until desired consistency is reached.
  5. Taste and adjust seasoning as needed.
  6. Transfer to a serving bowl, drizzle with olive oil, and garnish as desired. Serve immediately or refrigerate for an hour to let flavors meld.

Notes

Try substituting tahini with sunflower seed butter for a nut-free option. For added flavor, incorporate paprika or smoked paprika.
