A creamy, vibrant hummus made with roasted red peppers that brings joy and warmth to any gathering.
Ingredients

- 1 can chickpeas, rinsed and drained
- 2 roasted red peppers
- 1/4 cup tahini
- 1 garlic clove
- 1/4 cup fresh lemon juice
- 2 tablespoons olive oil
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
Instructions
- If using dried chickpeas, soak overnight and cook until tender. For canned, simply rinse and drain.
- Roast your own red peppers by laying them on a baking sheet, brushing with olive oil, and roasting at 450°F until charred.
- In a food processor, combine rinsed chickpeas, roasted red peppers, tahini, garlic, lemon juice, cumin, salt, and olive oil.
- Blend until smooth, adding water or more olive oil gradually until desired consistency is reached.
- Taste and adjust seasoning as needed.
- Transfer to a serving bowl, drizzle with olive oil, and garnish as desired. Serve immediately or refrigerate for an hour to let flavors meld.
Notes
Try substituting tahini with sunflower seed butter for a nut-free option. For added flavor, incorporate paprika or smoked paprika.
