Ingredients

- 1 can tuna in water or oil
- 1 can garbanzo beans, drained
- 1 cucumber, chopped
- 2 tomatoes, diced
- 1 bell pepper, diced
- 2 tablespoons fresh parsley or dill, chopped

- 1 tablespoon lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Drain the canned tuna and garbanzo beans.
- In a large bowl, combine the tuna and beans gently.
- Chop your fresh vegetables into bite-sized pieces and add them to the bowl.
- In a small bowl, mix olive oil, lemon juice, minced garlic, salt, and pepper for the dressing.
- Drizzle the dressing over the salad and gently toss to coat.
- Finish with chopped herbs and optionally some seeds for crunch.
- Let the salad sit for a few minutes before serving to meld the flavors.
