  • 1 cup long-grain white rice
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon smoked paprika (optional)
  • Fresh cilantro or parsley, for garnish
  • Optional toppings: avocado slices, sesame seeds

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add diced onions and bell peppers. Sauté until softened, about 3–4 minutes.
  2. Add minced garlic and cook until fragrant, about 1 minute.
  3. Increase the heat slightly and add ground turkey. Cook until browned, about 6–8 minutes, breaking it apart with a spoon.
  4. Sprinkle seasonings and stir well.
  5. Pour in soy sauce and combine. Cook for an additional couple of minutes.
  6. Meanwhile, cook rice according to package instructions.
  7. Serve the turkey mixture over the rice in bowls. Top with herbs and optional sesame oil.
