- 1 pound ground turkey
- 1 cup long-grain white rice
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon smoked paprika (optional)
- Fresh cilantro or parsley, for garnish
- Optional toppings: avocado slices, sesame seeds
Instructions
- In a large skillet, heat olive oil over medium heat. Add diced onions and bell peppers. Sauté until softened, about 3–4 minutes.
- Add minced garlic and cook until fragrant, about 1 minute.
- Increase the heat slightly and add ground turkey. Cook until browned, about 6–8 minutes, breaking it apart with a spoon.
- Sprinkle seasonings and stir well.
- Pour in soy sauce and combine. Cook for an additional couple of minutes.
- Meanwhile, cook rice according to package instructions.
- Serve the turkey mixture over the rice in bowls. Top with herbs and optional sesame oil.
