- 8 oz mushrooms, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 2 tbsp soy sauce
- 1 tbsp rice vinegar or lime juice
- Fresh parsley or cilantro, for garnish
- 1 tbsp olive oil
Instructions
- Prep the ingredients: Start by chopping your onion and garlic, slicing the mushrooms, and measuring out your rice.
- Cook the rice: Follow package instructions for the rice of your choice, keeping it warm while you prepare the turkey.
- Sauté the aromatics: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onions and garlic, sautéing until translucent, about 3-4 minutes.
- Add the ground turkey: Increase the heat and add the ground turkey to the skillet. Break it up and sauté until browned, about 5-7 minutes.
- Include the mushrooms and veggies: Once turkey is cooked, add mushrooms and any other vegetables, cooking until tender. Season with salt, pepper, and soy sauce.
- Finish and serve: Remove from heat, stir in rice vinegar or lime juice and fresh herbs, then serve over rice.
Notes
For a vegetarian version, substitute ground turkey with ground chicken or a plant-based alternative. You can adjust the vegetables based on your preferences.
