Delicious Greek Smashed Potatoes with Feta

Description

A comforting recipe for smashed potatoes topped with creamy feta and fresh herbs, capturing the essence of home cooking.


Ingredients

  • 2 lbs Yukon Gold or Red potatoes
  • 1 cup fresh feta cheese
  • 1/4 cup olive oil
  • 23 garlic cloves, minced
  • 1/4 cup fresh dill or parsley, chopped
  • Salt to taste
  • Black pepper to taste
  • Juice of 1 lemon

Instructions

  1. In a large pot, cover the potatoes with water and add a generous pinch of salt. Boil for 15-20 minutes until fork-tender.
  2. Preheat your oven to 425°F (220°C).
  3. Drain the potatoes and let them cool for a few minutes.
  4. Gently press each potato with a fork or the bottom of a glass until smashed but still holding their shape.
  5. Drizzle olive oil over the smashed potatoes and sprinkle with salt and pepper. Add minced garlic and fresh herbs if using.
  6. Spread the potatoes on a parchment-lined baking sheet and roast for 25-30 minutes, until crispy and golden.
  7. Five minutes before they are done, crumble fresh feta over the potatoes and return to the oven to melt slightly.
  8. Remove from the oven and finish with a drizzle of fresh lemon juice. Enjoy!

Notes

For an extra kick, mix red pepper flakes into the olive oil before drizzling over the potatoes.
